What goes into every bite
We use fresh British chicken thigh, HMC halal certified and hand-slaughtered, sourced direct from British farms. Our vegetarian tikkas are made with paneer. Produce is bought fresh every day, with nothing preserved.
There's no food colouring and no MSG anywhere in our kitchen. Every bit of colour and flavour comes from the spice blends themselves: ginger paste, garlic paste, lemon, mustard oil and raw spices, each one fine-tuned until it cooks exactly right.
Marinated in-house, every day
The marinades are still made by our founder himself. Each of the five flavours (Malai, Hariyali, Lassuni, Classic and Angara) is its own recipe with its own story, refined over years before it earned a place on the menu.
Grilled fresh. Never reheated.
There is no microwave in the building. Nothing is chilled and reheated the next day. Every portion is grilled fresh every day, the way tikka is meant to be cooked.
The consistency obsession
The hardest part was never the recipe. It was making it taste the same every single time, no matter who was cooking or what day it was. We spent nine months testing equipment and cook settings until we found a method that takes the guesswork out entirely. Whoever's on the grill, whatever time you walk in, it comes out the same.
HMC halal, properly certified
Everything we serve is halal. Our chicken is certified by the Halal Monitoring Committee (HMC), the strictest halal certification body in the UK, and we use no non-halal ingredients anywhere in the kitchen. Tikkas is also fully alcohol-free.
